Whole Wheat Dark Chocolate Pancakes=Yummy Deliciousness!

The girls wanted a special breakfast this morning so I whipped up these:


They were delicious!  Here's the recipe just in case you're in the mood.  Enjoy!

Whole Wheat Dark Chocolate Pancakes
Makes 4 pancakes

3/4 cup skim milk
2 Tbls white vinegar
1 cup white whole wheat flour
2 Tbls sugar
1 tsp baking powder
.5 tsp baking soda
.5 tsp salt
1 egg
2 tsp vanilla
2 Tbls canola oil
Dark chocolate chips

Combine the milk and vinegar and let it sit for a few minutes. In a medium bowl whisk together the flour, sugar, baking powder, baking soda and salt. Whisk together the egg, vanilla and canola oil together with the milk. Make a well in the flour mixture and add the wet ingredients. Only mix until combined, don't over mix or they'll turn out tough. Ladle some out on a preheated griddle and sprinkle on some dark chocolate chips. Cook until edges start to brown and bubbles form on top. Flip over and cook for a few minutes more. We ate them up with sliced bananas. 

There were no leftovers!
